Notes
I bought drumsticks in the supermarket and looked at the directions. They advised the browning in the pan and 35 minutes in the oven at 180 degrees. I adapted the recipe a little. The poking of holes in the skin lets the seasoning penetrate into the meat. I think it also import to dry the meat before you put it in the pan. The first time I tried this recipe, I got the drumsticks out of the oven at 30 minutes. The core temperature was about 90 °C (194 °F). It tasted good. The second the oven part was 25 minutes, the core temperatures was 75 °C (167 °F). to my surprise it tasted even better. The meat was juicier. This shows that it worth the effort to calibrate the cooking time to your particular oven and pan.Â
You could serve with some oven or air fryer fries and toss these fries in the cast iron pan after the drumsticks are ready. It adds some extra flavour to the fries and tastes really good. Whip a quick salad to add some greens to your meal. Â
For seasoning salt and pepper will do, but i guess you use whatever you have in your cupboard. I served it french fries and some mayonnaise.Â
